Red Tongue

It mainly occurs on stony ground, at depths of 10 to 200 meters it can be found. However, they prefer a muddy to sandy bottom.

The small specimens should be prepared whole, the slightly larger ones can be filleted. The skin of the red tongue is slimy and must definitely be scrubbed. Make sure that the slime does not touch the skin. Red tongue tastes best when fried, as a fillet with or without skin, or as a whole fish.

The red tongue, also called Limanda, is often confused with the sole-like red tongue (dog's tongue), which is a kind of counterfeit of the red tongue. The Limanda is a right-eyed flatfish and can live up to 17 years. It grows to about 60 centimeters long and weighs up to 2.95 kg. In its small mouth, it has sharp cutting teeth and feeds on small worm-like creatures without vertebrae. They reproduce from April to August at depths of 50-150 meters; their eggs are pelagic and measure 1-1.5 mm in size. The larvae hatch after about a week, and once they are large enough, they live on the seabed.
