The effect of dough on health depends on the ingredients and preparation. Generally, flour dough provides carbohydrates which give the body energy. Whole wheat flour contains more fiber, vitamins, and minerals than refined flour and can therefore be healthier. An excess of dough products, especially when made from white flour and with a lot of sugar, can however contribute to weight gain. Doughs containing raw eggs should always be thoroughly baked before consumption to avoid the risk of salmonella infection. How High is the Nutrient Content of Flour
But only flour made from wheat, spelt, emmer or rye is suitable for baking and making dough, so to speak, for bread production. In the process of flour production, cereal grains are ground down. This is most effectively done by grinding the grain between mill rollers in a millstone in a mill. In a modern way, after grinding, it is sifted and screened in what is called a sifting machine to separate different particle sizes. The grain can be milled to varying degrees of fineness depending on the situation. The nutrient content of flour depends on the milling degree. Wheat flour consists of 59 to 72 percent carbohydrates, 14 to 15 percent water, 10 to 12 percent proteins, 0.9 to 2.3 percent fat, and 0.4 to 1.7 percent mineral salts.
Baking Flour and Its Differences
Flour that is produced with a high degree of milling is dark and richer in vitamins and minerals because a large portion of the husk is ground along with it. Generally, the average particle size of flour is below 180 µm. If it is pre-packaged flour, the flour treatment must also be declared in the ingredient list. Chemical preservation or bleaching of flour is not allowed in Germany. Usually, ascorbic acid is added to wheat flour that is used as baking flour for dough because it strengthens the gluten structure and ensures a better baking result.
What Do Flour Type Designations Mean
Generally, flour is known as basic baking flour for making doughs for further processing into baked goods and pastries. Flour must be stored below 20° C and at an air humidity of less than 65 percent. The common types of flour are ordered by numbers. Here it applies that the lower the number, the whiter is the flour. Especially white flour is more suitable for baking, it is the dough baking flour. For example, wheat flour Type 405 is particularly well-suited due to its good taste and baking properties for use in the kitchen. Types 505 and 630 are used for baking bread and rolls.
