Properties: Rye Mix Bread
Roggenmischbrot has the disadvantage compared to Weizenbrot that it would collapse on itself and not be bakeable at all, at least not have the nicely loose yet bite-resistant consistency we are used to from bread. Nonetheless, the unsoured variant makes sense whenever bread is needed that must last extremely long, such as on long sea voyages. Then one gets a hard and durable flatbread.
Roggenmischbrot is rich in minerals; for example, 100g of bread contains 38 mg Magnesium, 23 mg Calcium, 153 mg Potassium, 422 mg Sodium, and 122 mg Phosphorus.
Origin: Rye Mix Bread
A traditionally produced spelt mix bread contains spelt flour, water, salt, and a leavening agent. Handcrafted, it takes three days to bake. It usually includes yeast or sourdough. Industrially produced bread uses additional additives to improve the dough.
Uses: Rye Mix Bread
For breakfast, snacks, or between meals; whole grain bread is a healthy staple that can be combined with various spreads.
Storage: Rye Mix Bread
Roggenmischbrot is a product that is best purchased and consumed fresh. If it is stored, then cool and dry conditions should be maintained. If not consumed in time, it will become hard after just a few days. Roggenmischbrot can be frozen without any problems.
Health: Rye Mix Bread
In contrast to white bread, which provides few nutrients or dietary fibers, whole grain bread is different. It is rich in vitamins, minerals, and trace elements and thus contributes to health and daily nutrient supply.

What is a Roggenmischbrot
In some regions of Germany, the Mischbrot is also known as Graubrot or Schwarzbrot. They contain 51 to 89% rye. The Mischbrot is baked with yeast and a mixture of wheat and rye. The fresher a loaf stays, the more rye it contains, and the longer it remains tasty. Additionally, the spicier the bread becomes with a higher proportion of rye. In Southern Germany, sales are mostly in long or round shapes, while in the North of the Republic, only long loaves are offered.
The Ingredients in Roggenmischbrot
A Roggenmischbrot is traditionally made from rye flour, water, and milk sourdough. Various yeast types are also added to ensure the dough rises. However, usually insufficient yeast is available for leavening the dough, so bakers often add baker's yeast.
