Spiegeleier are worldwide known. As they can be prepared particularly easily, they are a popular dish on their own, but can also form a complete meal when combined with other foods.

Scrambled egg

Properties: Scrambled egg

For the preparation of a fried egg, an egg is fried in fat such as butter, lard, sunflower oil, olive oil, ghee, or even animal fat according to region and variation. Similarly, there are differences in seasoning, which is why the term "fried egg" is widely varied globally. The two main ingredients, egg and fat, are therefore decisive. The preparation occurs either in a small or medium-sized pan or in the oven depending on the variation. Through one-sided frying of the ice, this becomes crispy at the bottom while the yolk remains runny in the set white. The name likely stems from the shiny surface of the yolk. Alternatively, the egg can also be fried on both sides or hard-boiled with a closed lid. This preparation is particularly beneficial for health when using older eggs.

Origin: Scrambled egg

The origin of the fried egg cannot be precisely documented. It is, however, clear that eggs have been eaten by humans for thousands of years and there are also far-reaching historical documents on fried eggs. Therefore, it is likely that eggs were already fried in oil in antiquity. For example, the ancient Romans consumed eggs with honey, although this was an omelette. The term "Spiegelei" is linguistically documented in the German language at the earliest in the 18th century.

Uses: Scrambled egg

While spiegeleier in the German-speaking region are understood as a pure dish, they can also form their own meal in combination with further ingredients in other countries. A special feature is also the egg in the basket (from English "egg in the basket"), where the egg is fried in the middle of a hollowed-out bread slice. In the USA, the consistency of the spiegeleier is precisely specified, so it can be served "over easy", "over medium", "over well" or classically "sunny-side up".

Storage: Scrambled egg

Basically, it is customary to consume poached eggs fresh. However, if the egg including the yolk has been hard-boiled, it can also be stored. The prepared poached egg will then keep for up to two days in the refrigerator. Nevertheless, if the yolk is runny or the temperature is high, the poached egg should not be consumed later due to the risk of salmonella formation.

Health: Scrambled egg

The nutritional values of egg white depend always significantly on the preparation. For example, they vary depending on the amount and type of fat as well as additional ingredients. Nonetheless, a recommendation for weekly egg consumption can be taken here, with two to three eggs being advisable. Since it often involves a calorie- and fatty meal due to the use of much fat, spiced egg whites should be consumed in moderation compared to other egg dishes. Nevertheless, they make up a full meal when combined with other foods such as bread, potatoes, or vegetables. By using high-quality and unsaturated fats, the health value of egg whites can be increased.
