Origin
The name Hornsalt can be traced back to the former production of the powder: deer antlers were ground finely and heated. Today, the food additive E 503 is obtained by bringing carbon dioxide (E 290) into reaction with ammonia.
Usage
Baking agent E 503 is only suitable for flatbreads as traditionally common in shortcrust pastry, gingerbread, speculaas, and springerle. Since toxic ammonia is produced during baking, E 503 is not suitable for high doughs from which the ammonia could not escape. E 503 releases carbon dioxide during the baking process, which lightens the dough. Besides in the mentioned foods, ammonium carbonate can also be found in cocoa or coffee substitutes, baking powder, and chocolate. E 503 is also approved for bio products and can be added to food.
