Origin
As already described, Calcium-5'-ribonucleotide is present in every living cell and is also obtained from living cells for use in industrial food production. These can originate from animal or plant cells.
Usage
E 634 can be used as an additive in all foods. There is only one restriction regarding the maximum amount used, which must not exceed 500 mg/kg. The flavor enhancer is frequently used in the following foodstuffs: beverages, spices, and ready meals.
Risks
The food additive E 634 is considered safe for use as a flavor enhancer because it is an endogenous substance for humans. Even at the quantities used as a flavor enhancer, E 634 is harmless; therefore, no recommended daily intake (ADI value) has been established so far. However, individuals with elevated uric acid levels should avoid foods containing E 634 additives, as this substance metabolizes like uric acid and can lead to gout in cases of disturbed uric acid breakdown.
