E 353 - Meta-wine acid

Last updated: 22.01.2018

The so-called meta-wine acid is a completely natural product that can be obtained from wine residues in winemaking and is a derivative of wine acid. In the food industry, meta-wine acid is used as an acidity regulator under the designation E 353.

E 353 - Meta-wine acid

Origin

E 353 is produced from tartaric acid by strongly heating it and then finely grinding the cooled melt.

Usage

The meta-tartaric acid can only be used in a very limited scope within the food industry. E 353 is only permitted for wine-like alcoholic beverages. These include wine, sparkling wine, as well as wine that is made exclusively from grape must concentrate and sold in trade as "made wine."

Risks

The use of meta-tartaric acid as an additive in food or within the above-mentioned limited scope is considered completely harmless, just like substance E 353 itself. Therefore, alcoholic beverages to which E 353 has been added can be purchased without concern.
