E 524 - Sodium hydroxide

Last updated: 23.01.2018

Sodium hydroxide is used in the food industry under the designation E 524 as a pH regulator. The substance is better known as lye, which is traditionally used to produce leavened bakery products. The use of sodium hydroxide is also permitted for organic products.

E 524 - Sodium hydroxide

Origin

Chemically, E 524 can be obtained through two methods. First, sodium carbonate can react with calcium hydroxide or secondly, sodium reacts with water in an exothermic reaction. The end product is a white solid substance that dissolves well in water.

Usage

The food additive E 524 can be used without maximum quantity restrictions in all foods that are approved for use with additives. In the following foods, E 524 is among others used: spices, olives, leavened bakery products, jam, preserves, jelly, and cocoa mass.

Risks

So far, no ADI value (Acceptable Daily Intake) has been set for E 524, as the use of sodium hydroxide as an additive in food production is considered safe for the human organism.
