Origin
Due to its pH-regulating properties, E 535 is also known under the name Caustic Potash. For industrial production, E 525 is manufactured in a chemical process where the substance potassium chloride is subjected to aqueous electrolysis. The resulting substance is then evaporated. Potassium hydroxide lies as a white solid substance after this process, which dissolves well in water.
Usage
E 525 is added to jams, jellies, and gelées among others. Furthermore, E 525 is a very important additive for the production of instant tea. Additionally, E 525 is needed for the treatment of cocoa mass before it can be further used in end products. Generally, E 525 can be used without maximum quantity restrictions in all foods to which food additives may be added.
Risks
Potassium hydroxide is a food additive that is considered harmless for the human organism. So far, no ADI value (Acceptable Daily Intake) has been established.
