E 451 - Tripolyphosphate

The food additive designated as E 451 is used in the food industry as a stabilizer. E 451 is the name for triphosphates, derivatives of phosphoric acid (E 338), which is also used as a food additive. Due to their versatility, triphosphates are also used as acidity regulators or as flux salts.

Origin

To produce E 451, the starting material phosphoric acid is reacted with potassium or sodium under high heat influence.

Usage

Triphosphates are only permitted for certain foodstuffs in the European Union and are subject to specific different maximum quantity restrictions for each respective foodstuff. E 451 can be found in the following foods: ice cream, meat products, desserts, as well as melting cheese preparations.

Risks

Phosphates are considered risky and concerning substances. However, suspicions that E 451 promotes hyperactivity in children and osteoporosis could not be confirmed. The ADI value (Acceptable Daily Intake), i.e., the recommended daily dose, is set at 70 mg per kilogram of body weight.
