Last updated: 23.01.2018

The natural substance Quillaja extract is permitted as a food additive in the European Union. Under the designation E 999, Quillaja extract is used as a stabilizer in foods. Quillaja extract naturally contains soap components, the so-called saponins, which can be utilized to maintain a slightly foaming behavior of foods stable. Since E 999 also has a slightly bitter taste, the substance is also used for flavoring beverages.

E 999 - Quillaia extract

Origin

The Quillaja extract originates from the bark of the soapbark tree, which grows as an evergreen tree primarily in South America. Its natural property of containing saponins has been traditionally used for centuries to wash clothes. The food industry can also utilize its natural foaming properties. For this purpose, the extract is obtained from the bark and purified to such an extent that the substance meets food quality standards.

Usage

E 999 can only be partially used as a food additive. E 999 is exclusively permitted for use in non-alcoholic beverages and must not exceed a concentration of mg/l. Primarily, E 999 is added to Ginger Ale or Cider.

Risks

For a long time, E 999 was banned as a stabilizer in Germany because the contained saponins can be toxic if they enter the bloodstream. However, with adjustments within the European Union, this ban could not be maintained. Nevertheless, the permitted maximum concentration has been limited. To reach this limit, for example, one would have to drink 1.75 liters of Ginger Ale. The ADI value is at 5mg/kg.
