E 957 has so far been obtained from the Katemfe plant for use in the food industry. This extraction process generates a high effort, hence production is very expensive and this reduces the possible applications of the substance. Its use is also limited by its licorice-like aftertaste. However, it has now become biotechnologically feasible to produce E 957 through microorganisms.
Usage
Theoretically, Thaumatin provides energy due to its protein content; however, because of its strong sweetness, E 957 is used in such small doses that the contribution to energy metabolism in the body can be neglected. E 957 is used in calorie-reduced chewing gum, ice cream, desserts, non-alcoholic beverages, and sweets.
