E 1404 - Modified Starch

Modified starch is used as a food additive under the designation E 1404 in the European Union. E 1404 is primarily used as a thickening agent. Modified starch, sometimes called Oxidized Starch, was developed from natural starch and has the property of thickening even at low temperatures.

Origin

E 1404 is derived from natural starch and produced through a chemical process involving the reaction with sodium hypochlorite. As suppliers for the natural starch, plants such as corn, potatoes, or wheat are typically used. The use of genetically modified plants also frequently occurs in this context.

Usage

E 1404 can be used without any maximum quantity restrictions for all foods. A maximum quantity restriction only applies to its use in food products for infants or young children. Here, Modified Starch may only be used up to a maximum of 50 g/kg. Primarily, E 1404 is used in products such as mayonnaise, dressings, fillings, cake creams, ready soups, and sauces.

Risks

Modified Starch or E 1404 is considered a completely harmless substance for the human organism. Therefore, no ADI value (Acceptable Daily Intake) has been established. E 1404 is metabolized in the body like carbohydrates.
